ABBAYE DE SAINT-BENOÎT-DU-LAC - Fumé Bleu wedge
Starting in 1912, Benedictine monks from France built a monastery overlooking Lake Memphremagog, in Quebec. For over one hundred years, the monks have been making cheese (and cider) at the only Fromagerie in Canada run by Benedictine Monks.
Fumé Bleu (Smoked Blue) is made using blue cheeses specially selected from the abbey cellars. The natural wood smoke yields a slightly woody taste that goes very well with the Roquefort flavour.
