Oveja Romero (Sheep with rosemary) is made in the famous region of La Mancha, known for its Manchego, in Spain.

Local pasteurized sheep's milk gives the cheese its atypical flavor and pure white paste.
Aged for at least 4 months, it has a compact and melting texture in the mouth. Its delicate rind is generously rolled in fresh rosemary.
